Eat green means eating minimally processed food, that is healthy for you and for the environment.
Eat green also literally means : eat green! Green vegetables. For example, broccoli, courgette, lettuce and peas are some green vegetables which are harvested in July.
What do they have in common besides their colour?
Their green colour shows that these vegetables are rich in chlorophyll, a natural chemical of green pigmentation, that has antibacterial and antioxidant properties that help to clean our body of impurities and toxins.
Green vegetables are also a rich source of minerals, such as: calcium, magnesium, potassium and vitamins B, C , E and K, which are essential for the health of the human body. Because they are mostly alkaline, rather than acidic, they also help to regulate and maintain the body’s pH (potential hydrogen) levels.
